Chicken Creole

Makes 4 servings of Chicken Creole
* 4 chicken breasts 6 -- 8 oz each, boneless and skinless
* ¼ - ½ pound diced bacon
* 1 cup diced onion
* ½ cup small diced red bell pepper
* ½ cup of small diced green bell pepper
* 1 cup small diced celery
* 1 jalapeno pepper diced brunoise
* 2 tablespoons minced garlic
* 1 teaspoon minced fresh thyme
* 2 cups small diced tomatoes
* 6 oz tomato puree
* ½ cup chicken stock
